Coco-Blue Muffins

For 12 muffinz

Ingredients:

Dry Ingredients:

- 1 c. Gluten Free Oat Flour

- 1 c. Gluten Free Oats

- 3/4 tsp cinnamon

- 1/4 tsp salt

- 1.5 tsp baking powder

- 1/2 tsp baking soda

- 2 Tbsp shredded coconut


Wet Ingredients:

- 1 egg, whisked

- 1/4 c. maple syrup

- 1 Tbsp honey

- 1 c. 2% Plain Greek Yogurt

- 1/4 c. Milk

- 1 c. Blueberries

- 1 Tbsp Vanilla


Directions:

1. Preheat oven to 350 degrees F.

2. Mix dry ingredients together in a medium bowl.

3. Beat egg and add syrup, honey, yogurt, vanilla, and milk.

4. Pour wet ingredients into dry and combine well.

5. Gently fod in blueberries.

6. Line muffin tins and lightly spray to prevent sticking and fill 12 muffin tins evenly.

7. Bake for 20 minutes.
