Macho Pork Tacos Ft. Dreamy Avo Sauce


Makes 12 Small Tacos


Ingredients

- Wheat or corn tortillas

- Iceberg lettuce, chopped


Shredded Pork

- 2 Pork Tenderloins

- 1 c. Chicken Bone Broth

- 3 Tbsp BBQ Sauce

- 1 Tbsp Olive Oil

- 1 Tbsp Paprika

- 1 tsp Brown Sugar

- ½ tsp Garlic Powder

- ½ tsp Dry Mustard

- ½ tsp Salt


Pickled Red Onions

- ½ Red Onion, thinly sliced

- Apple Cider Vinegar

- Salt

- White Sugar

- Water


Dreamy Avo Sauce

- 1 Avocado

- ½ c. Plain Greek Yogurt

- 1 Lime, zest & juice

- 2-3 Tbsp Fresh Cilantro (remove stems)

- 1 tsp Honey

- ¼ c. Apple Juice (may need more)

- ¼ tsp. Garlic Powder

- Salt & pepper


Directions

1. Place pork tenderloins and seasonings into a slow cooker. Cook on low for 3-4 hours. Remove tenderloins and shred, then add back to the juices in the crock pot.


2. Once the pork tenderloin is started, get the pickled red onions ready. Slice the red onion very thin and add to the jar. Fill the mason jar ½ full with apple cider vinegar. Add about 1 Tbsp Sugar and 1 tsp of salt. Then fill the remainder of the jar up with water. Shake well and let sit until serving.


3. Prior to eating make the dreamy avo sauce. Combine all ingredients in a blender and blend on low until smooth. You may need to add more apple juice if it is not blending. Transfer sauce to a condiment container.


4. Plate tacos: shell, pork, lettuce, pickled onion, and the dreamy avo sauce!
