Mango Kiwi Mahi

This was an interesting one! Mahi mahi fish with a fruit salsa on top. Keep those taste buds guessing.


Serves 4

Ingredients:

- 4 (4 oz) Mahi-mahi filets

- 2 Tbsp Olive oil

- 1-2 Garlic cloves, diced fine

- Sprinkle of red pepper flakes

- Salt & pepper

- Juice of 1/2 a lime


Salsa:

- 3/4 c. Pineapple, diced

- 1/2 c. Mango, diced

- 1 Kiwi, diced

- 2-3 Tbsp Red onion, diced

- 1/2 Jalapeno pepper, diced fine

- 1 Tbsp Honey

- Juice of 1/2 a lime

- Cilantro

- Salt & pepper


Directions:

1. Make the salsa first. Add all ingredients to a medium mixing bowl and let sit while you prepare the mahi-mahi.

2. In a large frying pan over medium heat, add olive oil, garlic and red pepper flakes. Add the mahi-mahi shortly after and fry for about 4-5 minutes per side. Once finish transfer to a plate and squirt with lime juice and add your desired amount of salt and pepper.

3. We plated as follows: Rice, generous handfuls of sliced iceberg lettuce, mahi-mahi, with a bunch of the salsa on top.
