The 97th Street Salad

This salad has been officially bumped up to first line for a salad in our house. We often have salad as the central meal, but this one could be great as a side salad with a different protein!

Ingredients for 4-6 servings:

-3 or 4 chicken breasts, grilled or baked (I used Traeger Chicken Rub for seasoning) and sliced

-2 cups of cooked quinoa, cooled

-1 small container of spring mix

-2-3 handfuls of spinach

-1/2 cup dried cranberries (craisins)

-1 Avocado, thinly sliced

-1 red bell pepper, thinly sliced


-Zest of 1 navel orange

-Juice of 1 navel orange

-Juice of 1/2 a lemon

-1/4 cup extra virgin olive oil

-1 Tbsp honey

-2 tsp. Dijon mustard

-1 Tbsp poppy seeds


1. Prepare chicken as desired.

2. Add all ingredients, aside from chicken, avocado and dressing in a large serving bowl.

3. Combine all dressing ingredients in a small mason jar. Shake lightly to mix and save extra if available. If you make this ahead store in the fridge to use for the next few days.

4. Plate salad and add the grilled chicken and avocado on top.

Salad game strong!
